Ingredients
For the filling:
- 3 cups cooked chicken, shredded (rotisserie works great)
- 1 medium white onion, diced (divided)
- 3 garlic cloves, minced
- 1 jalapeño, seeded and diced
- 1½ cups shredded Monterey Jack cheese (divided)
- 1 cup shredded cheddar cheese (divided)
For the spicy red sauce:
- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp chipotle powder or cayenne pepper
- 2 cups tomato sauce
- 1 cup chicken broth
- ¾ tsp salt
Other:
- 10 corn tortillas
For topping:
- ½ cup sour cream
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced
- 1 lime, cut into wedges
Directions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Start the sauce: Heat the vegetable oil in a saucepan over medium heat. Add half the diced onion and all the garlic, cooking until softened, about 3 minutes.
- Toast the spices: Stir in the flour, chili powder, cumin, smoked paprika, and chipotle powder. Cook for 1 minute, stirring constantly, until fragrant.
- Simmer the sauce: Whisk in the tomato sauce, chicken broth, and salt. Bring to a simmer and cook for 8–10 minutes, until slightly thickened. Set aside.
- Mix the filling: In a bowl, combine the shredded chicken, remaining diced onion, jalapeño, ½ cup of the sauce, and 1 cup of the combined cheeses.
- Warm the tortillas briefly in a dry skillet or microwave so they’re pliable and won’t crack when rolled.
- Assemble: Spread a thin layer of sauce on the bottom of the baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
- Top it off: Pour the remaining sauce evenly over the enchiladas, then sprinkle with the remaining cheese.
- Bake uncovered for 20 minutes, until the cheese is melted and bubbly and the edges are slightly crisp.
- Garnish and serve with sour cream, cilantro, diced avocado, and lime wedges.
Spice Tip: For milder enchiladas, skip the jalapeño and use just ¼ tsp chipotle powder. For more heat, stir in a diced chipotle in adobo or double the cayenne.
